Strawberry Shortcake Cookies

Only critique I would make is I would've liked more filling. However, that might just be because I love cream cheese.


Recipe taken from delish: Insane Sweets


3/4 c. Strawberries, chopped

1T. Lemon Juice

1/2 c. Sugar

2 c. AP Flour

1/2 tsp. Baking Powder

1/4 tsp. Salt

1/2 c. Butter, softened

1/4 c. Brown Sugar

1 ea. Egg

1 tsp. Vanilla

For the filling -->

1/4 c. Cream Cheese

3 T. Powdered Sugar

1 ea. Lemon, zest

Coarse sugar for garnish


  1. Stir together strawberries, lemon juice and 1T. sugar -- Let sit 10 minutes and then drain

  2. Beat butter, sugar & brown sugar until light and fluffy.

  3. Beat in egg and vanilla

  4. Add dry ingredients and mix until just combined; gently fold in strawberries

  5. Make filling: beat cream cheese, powdered sugar and lemon zest until smooth

  6. Using a medium cookie scoop; scoop 24 balls of dough(1 1/2T. each) and flatten each into a pancake like circle

  7. Top half of the dough pieces with 1 1/2tsp. cream cheese filling and then top with remaining dough - pinch to seal

  8. Roll gently into balls - transfer to baking sheets with parchment paper; sprinkle with coarse sugar

  9. Bake at 350F for about 18 minutes
