Homemade Nilla Wafers

Recipe taken from Bravetart, by Stella Parks


These came out tasting so incredibly close to the real thing and I only used imitation vanilla extract. I suggest using real vanilla extract or even vanilla bean or vanilla bean paste for an even better flavor.


1 3/4c. AP Flour

3/4 c. Sugar

4 oz. Butter

1 1/2 tsp. Baking Powder

1/2 tsp. Salt

1 T. Vanilla Extract

1 ea. Egg

1/4 c. Heavy Cream


  1. Combine sugar, butter, baking powder, salt and vanilla extract; mix until light and fluffy

  2. Beat together egg and heavy cream; add to mixer in small increments allowing each addition to incorporate before adding the next

  3. Sprinkle in flour and mix until smooth

  4. Transfer to a piping bag(can use ziploc bag)

  5. Hold the piping bag perpendicular to the baking sheet, with the tip almost touching the parchment. Squeeze batter out into a thin disc, about 1 inch wide and 3/8 inch thick

  6. Bake until the wafers are golden around the edges but still pale overall, about 20 minutes
