Soft Chocolate - Molasses Cookies

150 g. Butter

320 g. Granulated Sugar

80 g. Brown Sugar

2 ea. Eggs

160 g. Molasses

15 g. White Vinegar

5 g, Vanilla Extract

420 g. Bread Flour

105 g. Cocoa Powder

14 g. Baking Soda

7 g. Salt

--Cream the butter and sugar

--Add eggs one at a time, scraping down the bowl as necessary

--Slowly add the molasses, vinegar and extract

--Add dry, sifted ingredients and mix until well combined

--Chill until firm

--Portion dough into 20 g. balls and dredge in granulated sugar

--Bake at 350 for 8-10 minutes

***I didn't happen to have bread flour or white vinegar on hand, so I used all purpose flour and apple cider vinegar and they still came out absolutely delicious with the beautiful cracks!!
